Why would a 5e chain mail work when you don’t wear the gauntlets, vambraces, leggings, etc.?
I would make it so a smith who has the opportunity to study the magical Armor and some fund can alter the 5e Chain Mail into a Chain Shirt 5e.
Chain Shirt 5e vs Scale Mail; why pick the latter?
You can discover that the Medium Armor alternative for the starting equipment for both of them was Scale Mail. When looking through the armour options, we noticed that a Chain Shirt compared to Scale Mail costed the same, was one less AC, didn’t have Stealth Disadvantage, and weighed 25 lbs less. They are just different; one isn’t “better” than the other. If you want a higher AC, you pick Scale Mail. Since you appear to appreciate stealth and weight over AC, that makes a Chain Shirt better for your purposes.

My interpretation nevertheless is relying upon a bit of knowledge of how people used to dress in the past. Long underwear was quite common because there was no central heating etc. Wearing the string shirt is possible on your underwear and beneath your top.
That satisfied the between layers requirement in the description.
However, I think that the intention is it is worn above your everyday clothes and underneath a coat or comparable.
